So the entire purpose of this blog is to document my efforts to make and share one ice cream per week for a full calendar year. While running this ice cream tournament has been incredibly fun, I’ve been so busy staying up late coordinating the matchups and running around like a maniac purchasing and delivering ice cream pints that I almost didn’t fit in any ice cream making this week. Because of that, I decided to keep things very easy and very simple on the ice cream making front.
For this week, we’re making a simple Coconut Lime Sorbet. The recipe is from Bruce Weinstein’s The Ultimate Ice Cream Book.


Here are the ingredients I used:
The process is quite simple: Heat the sugars and coconut water…




…then add some lime zest and lime juice…



…And then finish by adding the coconut milk and whisking (or in this case, immersion blending) until smooth:



Then into the refrigerator for a couple of hours before churning.
Tasted great right out of the machine. Here are the final results:
This came out great. The flavor of the coconut and lime was perfect, and the texture was smooth and creamy…or as smooth and creamy as a sorbet can be. I especially appreciate how easy this was to make. Would definitely make it again. Could see it working well alongside a mango ice cream or sorbet.
